Mumbai’s The Bombay Canteen recently won the title of India’s Best Resto Bar at the prestigious annual nightlife and bar industry convention held in Mumbai, in association with Johnnie Walker the Journey. This resto bar saw off competition from a plethora of pubs and restaurants from other cities including The Grid (Kolkata), Olive Bistro (Hyderabad), Olive Bar and Kitchen (Bangalore), Town Hall (NCR), Terttulia (Pune), The Black Sheep Bistro (Goa) and Thirsty Crow (Chennai).The Bombay Canteen, which opened in the year 2015, is one of Mumbai’s most popular and revered dining spots. The hippest hangout of Maximum City, it marks the return of Chef Floyd Cardoz to Indian cuisine and together with Thomas Zacharias, he came up with the concept of serving some delectable regional dishes for its guests. In an interview to a leading daily, Zacharias spoke about how he has travelled to various parts of the country in order to learn the diverse food habits and cultures of the natives. He usually makes use of social media so as to get in touch with food enthusiasts and historians for recommendations. He stated, “I often end up with a long list and, if a specific place finds multiple recommendations, it turns into a must-try.
Sometimes, these are flavours and ideas take the form of an inspiration. The desi tacos we serve have a green chutney topping made from spinach. This was inspired by the Kali mirch chicken we had in Lucknow where the dish was served with kachumbar and some green creamy spinach chutney. Our tacos, too, come with chicken topped with this chutney, fermented tomatoes and kachumbar.” This 4000 sq. ft space is quite like a gymkhana dining room and makes for a fantastic place for some post-work revelry (food and drinks). One part of the space is a rustic bar while the other comprises polished dining tables where you can gorge on some of the most mouth-watering meals you’ve ever had.Some of the cocktails that you must try at The Bombay Canteen include the Tar Booze (watermelon juice, vodka, and kala namak), the Jhoom Jhaam (a concoction of pandan-infused vodka, apricot jam, white chocolate syrup, and orange bitters), Liberty Cinema (Raspberry –infused Gordon’s gin, lime, Chandon Sparkling Wine), and Incredible India (Smirnoff vodka, fresh ginger, pineapple juice, basil leaves, orange juice). The tantalizing dishes to be tried include the Desi Taco – Goan Pulled Pork Vindaloo, My Uncle’s Mutton Curry, Kejriwal Toasts, Gulab Nut, Red Snapper Ceviche, Guava Tan Ta Tan, Fresh Toor Samosa Chaat, Veg Mutton Kofta and Canteen Haleem.
